The things we do to make sure our customers enjoy their experience with us - we have taste tested every cocktail, every beer and every tequila to ensure we have put together a range of drinks that has something for everyone to enjoy.

COCKTAILS

Our Tomy Margarita is based on a recipie from Tomys bar and grill in San Francisco and is a modern take on the old Margarita and we think tastes even better.

The Creamy Cactus is our signature cocktail that eventuated from a brainstorming session around the cocktail bar where we chose some of our favourite liquers, added the to-die-for Mexican Caramel sauce and topped it off with a swirl of whipped cream - we all struggled to go back to work that afternoon!!!

Adios Amigo is thanks to some Mexican diners who told us that we really should have it on our cocktail list, they wrote the recipe out on a napkin for us, we taste tested it and decided it was good enough to go on our list - there is a reason it is called ADIOS though.

TEQUILA

We have learnt that Tequila is about much more than lip, sip, suck. In fact the many Mexicans we have had the privilege of drinking Tequila with refuse to have the salt and lemon. If you are interested in Tequilas we have given you a brief rundown on the different types of Tequila - if you're more into tasting it than reading about it come in and slowly work your way through our Tequila menu (not all in one night of course), which we are constantly researching to keep expanding with the best quality.

CATEGORIES

Tequila can only be produced in Mexico in the Tequila region, and must comply with strict government regulations. Tequila is produced in two categories which are then defined by four types according to the percentage of blue agave juice

TEQUILA 100%

Must be made with 100% blue agave juices and must be bottled at the distillery in Mexico. It may be Blanco Resposado or Anejo.
TEQUILA

Must be made with at least 51% blue agave juices , this Tequila may be exported in bulk to be bottled n other countries, it may be Blanco Gold, Resposado or Anejo.

TYPES OF TEQUILA

BLANCO OR SILVER
This is the traditional Tequila that started it all. It is transparent and fresh from the still. Blanco Tequila must be bottled immediately after the distillation process.


RESPOSADO OR RESTED
Blanco Tequila that has been kept (or rested) in white oak casks or vats called “pipones” for more than two months and up to one year. The oak barrels give Resposado a mellowed taste, pleasing bouquet, and its pale colour. Resposado keeps the Blue Agave taste and is gentler to the palate.


ANEJO
Blanco Tequila that has been aged in white oak casks for more than a year. The maximum capacity of the casks should not exceed 600 litres. The amber colour and woody flavour are picked up from the oak, and the oxidation that takes place through the pourous wood develops the unique bouquet and taste


RESERVA
Although not a category in itself, it is a special Anego that certain distillers keep in oak casks for up to eight years. Reserva enters the big league in both price and taste.


MEZCAL
Only Tequila made in the state of Julisco in Mexico can be called Tequila. If it is made in any other region of Mexico it is called Mezcal.
